  • 5 Fall Desserts That Should Be Illegal

5 Fall Desserts That Should Be Illegal

There are two things that I love to do in the Fall. One is to scroll through thousands of decadent dessert recipes on Pinterest and the second one is to never ever bake them. It’s not that I don’t want to bake these mouthwatering, calorie laden, things of beauty. It’s simply that I can’t. Or at least, I haven’t been successful, yet. Don’t let my failures deter you. I have more hope for you. I’ve chosen five of the most exquisite dessert recipes for Fall and I want you to have a go. Then, I want you to invite me over for dinner. Chocolate Bourbon Pecan Pie Cupcakes with Butter Pecan Frosting Please, they had me at bourbon. These cupcakes are so beautiful it would be absolutely essential to have two. In fact, if you’re planning on making these you might want to double up on the recipe. There is just no way they’ll last long enough for you to even get a photo to brag on social media that you actually made them. Seriously, don’t forget about that invite.       New England Apple Cider Cake Apple cider as a cake? Yes, I think I will. If someone is going to take the time to turn all of the things about Fall into a cake, than I’m going to try it, every single time.         Slow Cooker Sticky Caramel Pumpkin Cake This dreamy cake is made in the slow cooker. You’d think that this might be the one I could actually  manage to make. However, past experience has taught me to leave it to those with a little more skill. Too many cups of sweet, sweet sugar have been lost in my kitchen to some baking debacle or another.       Sweet Potato Layer Cake With Molasses Butter Cream I was hesitant at first, to be fair. Sweet potato? and cake? And then I thought to myself, ‘don’t be silly’ it’s cake, so it must be good. Check out the photo. Can you imagine walking into a dinner party with that in your hand. After you convinced the crowd that you did not, in fact, purchase it at the uppity bakery downtown, you could then bask in their grateful astonishment.       Honey Pears in Puff Pastry Okay, I am the last person to consider fruit a dessert. In fact, I find the thought of it offensive to real desserts. However, when said fruit is covered in puff pastry and caramel, I’ll make an exception. This one looks a little tricky even for a pro like you, so make sure you carve out enough time for it.       What are you doing still reading? You have some major kitchen prep to do if you’re going to make me..I mean your family a sweet treat tonight.
  • Summer Snacks! Healthy and creative recipes for your kids using seasonal fruits and veggies

Summer Snacks! Healthy and creative recipes for your kids using seasonal fruits and veggies

Achieving healthy summer snacks for the kids this summer should not be an exercise in frustration. It’s your summer, too. Spend less time in the kitchen and more time outside by using seasonal fruits and veggies to make delicious and easy to prepare summer snacks to keep the kids, and yourself, going when energy runs low. Fruity Popsicle You can do this, I promise. Grab what’s in season and chop it up into small pieces to place inside a Popsicle mold. If you really want to be fancy you can puree the fruit but who has time for that? Pour in some fruit juice from concentrate (or fancy people can make your own) and voila, a healthy snack that kids will love on a hot summer’s day. You’ll have to try one too, of course–just to make sure they are healthy enough, right?! Banana Dolphins I know what you’re thinking–this has Pinterest written all over it, and yes you’re right but trust me when I say that this is the easiest thing to hit Pinterest since I posted my recipe for ‘toast’. Go ahead, click on that link, I’ll wait. See, what did I tell you? What kid wouldn’t love eating a dolphin? Well, you know what I mean. The Pineapple Smoothie I don’t know about you but I wait all year for pineapples to come back into season. Then I make a number of decadent desserts and a few healthy treats, too. This little smoothie is a favorite for the kids because it is quick and easy and I can have it ready to go in the fridge for when they are famished from playing and need a boost. The only problem with this recipe is that I’ve discovered that adding a little rum can make it a fabulous adult beverage in no time. It goes without saying, I am sure, but just be careful not to mix up the two. Hummus Shots I love this one so much. It can be very difficult to talk the kids into veggies when all the sweet fruits of the season are abundant but with a little creativity your kids will love to snack on these hummus shots. Chop some veggies sticks and place decoratively in a tiny shot of hummus. This snack is perfect for kids on the go. In fact, I may try these at my next party. Who says kids can have all the fun? Berry Parfait They don’t have to know that Greek yogurt is good for them. When they hear the words ‘Berry Parfait’ they’ll know they are in for a treat. Throw in the berries of the season and layer with Greek yogurt to make a divine dessert. What a lucky bunch of kids these days. I remember the odd fluffer nutter but these creative snacks take the cake, so to speak. Having healthy and season=friendly snacks ready for your children is a must for busy parents these days. These easy to prepare and healthy snacks should satisfy the kids and keep you out of the kitchen, so you can spend more time enjoying the lovely weather this summer.

  • My Son’s First Birthday Party

    My Son’s First Birthday Party

My husband and I have officially made it to our son’s first birthday party. We’ve managed to keep him fed, clothed (for the most part) and happy. I’d say that’s our biggest life accomplishment to date, but let’s not forget the whole giving birth thing too. Since our now toddler (insert me crying here) is turning one it’s time to celebrate. I refuse to let myself look on Pinterest because, to be honest, I don’t have the time or creative mindset to host a birthday party that looks like a mini-wedding. To the parents that do, I salute you, but this mama wants to keep things simple. Here are some tips and tricks to help you plan. Keep Things Simple I mean this in every way possible. From decorations, to the length of the party, less really is more. Most young children play well for an hour or two, so keep the party short to prevent meltdowns. A few tips: Start the party after nap time Make sure there aren’t any food allergies. Create a baby-friendly play space (we will have a few kiddie pools set up and a slip ‘n slide for older kids) Have a room inside that parents can use to change their children (leave out extra diapers, wipes, and bibs) Evite it Up
