Achieving healthy summer snacks for the kids this summer should not be an exercise in frustration. It’s your summer, too. Spend less time in the kitchen and more time outside by using seasonal fruits and veggies to make delicious and easy to prepare summer snacks to keep the kids, and yourself, going when energy runs low.
You can do this, I promise. Grab what’s in season and chop it up into small pieces to place inside a Popsicle mold. If you really want to be fancy you can puree the fruit but who has time for that? Pour in some fruit juice from concentrate (or fancy people can make your own) and voila, a healthy snack that kids will love on a hot summer’s day. You’ll have to try one too, of course–just to make sure they are healthy enough, right?!

I don’t know about you but I wait all year for pineapples to come back into season. Then I make a number of decadent desserts and a few healthy treats, too. Throw in the berries of the season and layer with Greek yogurt to make a divine dessert. What a lucky bunch of kids these days. I remember the odd fluffer nutter but these creative snacks take the cake, so to speak.
