Achieving healthy summer snacks for the kids this summer should not be an exercise in frustration. It’s your summer, too. You can do this, I promise. Grab what’s in season and chop it up into small pieces to place inside a Popsicle mold. If you really want to be fancy you can puree the fruit but who has time for that? Pour in some fruit juice from concentrate (or fancy people can make your own) and voila, a healthy snack that kids will love on a hot summer’s day. You’ll have to try one too, of course–just to make sure they are healthy enough, right?!
I know what you’re thinking–this has Pinterest written all over it, and yes you’re right but trust me when I say that this is the easiest thing to hit Pinterest since I posted my recipe for ‘toast’. Go ahead, click on that link, I’ll wait. See, what did I tell you? What kid wouldn’t love eating a dolphin? Well, you know what I mean.
I don’t know about you but I wait all year for pineapples to come back into season. Then I make a number of decadent desserts and a few healthy treats, too. This little smoothie is a favorite for the kids because it is quick and easy and I can have it ready to go in the fridge for when they are famished from playing and need a boost. The only problem with this recipe is that I’ve discovered that adding a little rum can make it a fabulous adult beverage in no time. Throw in the berries of the season and layer with Greek yogurt to make a divine dessert. What a lucky bunch of kids these days. I remember the odd fluffer nutter but these creative snacks take the cake, so to speak.
