– 6 eggs

– ¼ cup skim milk

– ½ cup chopped spinach

– ¼ cup cheese

– Salt and pepper, to taste

– Choice of sausage, bacon or ham

Preheat oven to 350 degrees.

Whisk together eggs and milk. Add in the rest of the ingredients and stir.

Spray muffin tin with cooking spray or use cupcake liners. Pour egg mixture evenly into the muffin cups.

Bake for 20 minutes. Use a butter knife to slide them out of the muffin tin and serve warm.
